Not bad, I am getting four 11 hour shifts a week Thurs to Sat, 11 to 10, I get a dish/prep chick for 3 hours in the afternoon, and a second cook on Friday nights or when we get some rezzo's. The Chef is working a second job, and only works the other 3 days, but I have known the dude for years and I don't care if I work the busy nights, as long as he makes sure I am stocked and deals with the owner.
I don't know if you have ever worked any one man shows, but it saves on bitching about who left the place a shithole if you open and close yourself. It is way below what my skill level is, but I have built a good crowd, and the pay is better than you would expect from a little pub. I am also perfecting my salad dressing recipe's and am going to start selling some products like dressings, herb butters, brewed ice tea, and old style sodas at the local farmers market.
It does not really satisfy the part of me that wants to do sauté again in a high end place, but I stress less, even when a ball team comes in after close and I still have to cook for them because they are regulars.
I take it you are full up with whatever kind of shits been handed to you lately at your job, and are moving on. Good move, the most miserable people to work with are the ones that no longer want to be there, but still won't leave for whatever reason. You should show up for your last shift as BigBear, and play it to the bone.
