Tonight I made some nachos. They’re so spicy and good that I decided to post my recipe.
What you will need:
- 1 bag tortilla chips (I like round, yellow corn style)
- 1/2 lb lean ground beef (I like 90% lean)
- 1 can black, pinto or Ranch brand beans
- 3 oz diced tomatoes with sliced jalapeños in can
- 3 oz shredded cheese
- 2 oz sour cream
- 1 oz velveeta cheese
- Some sliced jalapeños
Spices and sauce:
- Dash cumin
- Dash cardamom
- Dash chili powder
- Dash jalapeño salt (or regular salt)
- Dash garlic salt
- Dash freshly ground black pepper
- Dash cayenne pepper
- 1 oz Beer
- Dash lime juice
- 1 oz Blair’s After Death Sauce with Liquid Fire (more or less to taste)
Preparation:
- Brown the meat over medium heat.
- Add beer and all spices except lime juice and Blair’s After Death sauce, mix well with meat.
- Let meat cook until mostly done, then add 1 can beans, sliced jalapeños, and diced tomatoes. Mix well. Let simmer for several minutes, stirring occasionally.
- Add lime juice and mix well, then add Blair’s After Death Sauce and mix well. Simmer for 2-3 more minutes.
- Put the velveeta in the microwave to melt. 1 minute should be enough. If the cheese is not melted, microwave it in intervals of 20 seconds until completely melted.
- Place the tortilla chips on a plate. While hot, pour the meat, bean and tomato mixture over the chips. Add shredded cheese, then melted velveeta cheese and finally sour cream.
Caution: These nachos will be quite spicy thanks to Blair’s After Death sauce. Eat at your own peril!
Ideally you should pair these nachos with a cold glass of milk or a cold Mexican beer, preferably Pacífico, with a Mexican lime wedge. Do not eat these nachos with Corona or Dos Equis, as you will have wasted your time making a delicious meal only to pair it with a shitty beer.
If you made these nachos correctly, they should burn ya twice. Enjoy!
