    Having the oil at the correct temperature and not over cooking them is important. Overcooking them boils all the water out allowing the oil to soak in making them soggy. The water boils creating steam pressure which keeps the oil out. 180-190 degrees C is an ideal temperature range for cooking "French fries" (we call them chips here (not to be confused with potato crisps which are also referred to as chips here as well)).
